Two ingredient cashew "cookie"

~ Healthy Recipe ~

This will be one of the quickest, easiest (and yummiest) 2 ingredient recipes you’ll ever make!

When I’m busy with uni and work (which less face it, is most of the time), I don’t have a lot of time to develop new recipes.  So I challenge myself to create something that takes less than 15 minutes and uses less than 5 ingredients.  And these raw "cookies"… are a product of that!

Fun Fact – Cashews contain small amounts of non-haem (plant based) iron!

You can make this recipe into balls or you can flatten them into a “cookie” shape.  They’re also shelf stable so feel free to take them in your bag for a snack on the go.

Note: for allergies & intolerances, they're naturally free from peanuts, soy, dairy, lactose, gluten, wheat and eggs (and are also vegan).

Two Ingredient Cashew “Cookie”

  • Prep time: 10 minutes
  • Total time: 10 minutes
  • Serves: 8

Ingredients

  • 140g raw unsalted cashews
  • 180g pitted dried dates

Instructions

  1. Add cashews to a blender and blend into a ‘flour’.  Add the dates and blend until well combined.
  2. Roll into approximately 8 – 10 balls, then flatten and mould into a cookie shape.
