This will be one of the quickest, easiest (and yummiest) 2 ingredient recipes you’ll ever make!
When I’m busy with uni and work (which less face it, is most of the time), I don’t have a lot of time to develop new recipes. So I challenge myself to create something that takes less than 15 minutes and uses less than 5 ingredients. And these raw "cookies"… are a product of that!
Fun Fact – Cashews contain small amounts of non-haem (plant based) iron!
You can make this recipe into balls or you can flatten them into a “cookie” shape. They’re also shelf stable so feel free to take them in your bag for a snack on the go.

Two Ingredient Cashew “Cookie”
- Prep time: 10 minutes
- Total time: 10 minutes
- Serves: 8
- 140g raw unsalted cashews
- 180g pitted dried dates
- Add cashews to a blender and blend into a ‘flour’. Add the dates and blend until well combined.
- Roll into approximately 8 – 10 balls, then flatten and mould into a cookie shape.
