Pineapple and coconut aka summer in a bowl.
Drink it or eat it with a spoon, this smoothie/dessert, is super refreshing and makes an awesome summer dessert!
Fun fact - did you know pineapples can help with protein digestion?
It contains high levels of an enzyme (bromelain) which helps break down protein, making it more easily absorbed.
It’s also a great source of Vitamin C.
How awesome is nature! But do watch if you’re amine intolerant, as it might leave your mouth tingling.
note: Try making it in advance and freezing for later and if you love fresh mint, it makes a really yummy add in!
