Pecan & Date Balls

Pecan & date…. seriously, what a delicious combo.

These were inspired by my impatience to make my Pecan & Date Tarts/Slice.. which take a little bit more time and effort to make (also more washing up!).  Don’t get me wrong, they’re still super easy, but when I’m busy (which is most of the time) I’m all about minimal time and ingredients.

These balls, therefore, resemble this slice but are packaged into neat little ball shapes of yumminess.

Top Tip – Along with your daily 5 serves of veggies and 2 serves of fruit, why not also add a handful of nuts!

Although optional, I also recommend adding a little bit of salt, as that salted caramel flavour adds a whole other dimension. 

Although you can make this with raw pecans, I also recommend roasting them (or if you can find already roasted pecans to purchase) as this really enhances flavour.

Pecan & Date Balls

  • Prep time: 10 minutes
  • Total time: 10 minutes
  • Serves: 4 (makes 8)

Ingredients

  • ¾ cup pecans, raw or dry roasted
  • ½ cup dried dates
  • ½ cup almond meal
  • ¼ tsp salt (optional)

Instructions

  1. Add ½ cup pecans, dates, almond meal and salt to a blender and blend until mixture starts to clump.
  2. Add ¼ cup pecans and pulse 3 – 4 times.
  3. Remove from blender and roll into approximately 8 balls.

Store in the fridge
