Mango and Coconut Chia Pudding

Mangoes, one of my all-time fave fruits. If you’ve never tried mango and coconut together, you’ve honestly been missing out!

I’m pretty lucky to have access to cheap mangoes in summertime Australia, but in the winter, frozen mango will work just as well.

This healthy dessert is so summery, tropical, refreshing and all over YUM.

It’s also a great recipe for meal prep, something you can make quickly and then keep in the fridge for the busy week. 

I made mine in 4 jars but glasses or a large container will work fine as well.  Can’t wait for you to try it!

Healthy Mango and Coconut Pudding

Mango & Coconut Chia Pudding
A summery, tropical and refreshing healthy chia pudding dessert
  • 1 cup almond meal
  • 1/2 cup dates
  • 2 small mangoes (fresh or frozen)
  • 1 tablespoon chia seeds
  • 1/2 cup + 3 tablespoons coconut cream
  • 1 tablespoon optional: honey
1. For the base, blend the almond meal and dates until mixture starts to clump. Evenly distribute and press down into 4 small jars/glasses or flat into small container.2. For the pudding, blend the mangoes into a puree and transfer into a small bowl. Add the coconut cream, honey and chia seeds and mix to combine. Evenly distribute onto the top of the jar/glass or container and place in the fridge to set for approximately 3 - 4 hours.
