I LOVE berries, well I love all fruit, but berries are one of those fruits that I have alllll the time. I have them on my porridge, muesli, yogurt and even as a snack.  

Berries are high in antioxidants, compounds which act as body guards for our cells and help protect them from damage.

This salad keeps well in the fridge and although the berries soften, they make an AWESOME topping for yogurt.

As it's summer here in Aus, that means berries are in season but frozen berries are a great option as well.

note: you can use any 4 punnets of berries that you like.

Berry Salad
A refreshing summer berry salad! note: you can use any 4 punnets of berries you like
  • 1 punnet strawberries
  • 1 punnet raspberries
  • 2 punnets blueberries
  • small handful (1/4 cup) fresh mint, finely chopped and diced
  • Juice of 1 lemon
  • 3 tablespoons honey
1. Combine all berries in a bowl and add the mint. 2. In a jug, mix the lemon juice and honey with a fork until combined. Pour over berries, mix and enjoy.
