If you’re like me, you LOVE banana bread, and this healthier version will defs hit the spot!

Although there is still a time and place for both - It’s less refined than ones you may buy in a café (that are often more like a dessert than a ‘bread’), using whole bananas, oats, almond meal and extra virgin olive oil.

Fun Fact: A ripe banana is low GI and contains carbohydrates, potassium and vitamin B6, making it great for pre or post exercise!

Therefore, although it's healthy, snacking on a whole banana is always a better option.

Note: You can also make it without the honey & by leaving the oats whole. For allergies & intolerances, it's naturally free from dairy and lactose.

Healthy Banana Bread
This healthy banana bread is less refined than ones you may buy in a cafe.  It's easy to make and uses whole bananas, oats, almonds and olive oil.  It's also suitable for dairy allergies and lactose intolerance.
Ingredients
  • 1 cup oats, blended into a flour
  • 1 cup almond meal/flour
  • 1 tablespoon ground flax seeds (optional)
  • 1/2 teaspoon baking powder
  • 1/4 cup extra virgin olive oil
  • 2 eggs
  • 3 small/2 medium ripe bananas
  • 1/4 cup honey
  • 1 teaspoon vanilla essence/extract (optional)NOTE: To make nut free, replace almond meal with another cup of oats, blended into a flour
Instructions
1. Pre heat oven to 180˚C. Add all dry ingredients to a bowl and mix until combined.2. Mash banana in separate bowl. Add wet ingredients to banana and mix until well combined.3. Add dry ingredients to wet ingredients and mix well. Pour into baking loaf tin approximately 10 x 5 inch.4. Bake for 40-45 minutes or until golden brown. NOTE: If making nut free version, bake for 30 - 35 mins or until golden brown.

Variations:

You can omit the honey (so there is no added sugar).

Can’t be bothered to get the blender out? Me either! you can also leave the oats whole.

Why not add cocoa powder and make it a chocolate banana bread!? Add 1 tablespoon of cocoa or cacao powder and there you have it.
